Yup. I’m an enameled cast iron guy. They just soak up heat, but they don’t distribute it well. They have high heat capacity but low conductivity.

David Hogg is surprisingly good at this stuff. I wish him a long and successful career. I realize that will probably mean I’m going to hate his guts in twenty years, but that’s ok.
