Some apps on F-Droid are limited for example but you can download the full featured app from Github. Later updates are anyhow cryptographically signed.

You can already do a lot!. Switch of all the invasive features from google. (Remove advertising ID, switch of any web and app history etc.) Install F-Droid and only use the “good” apps. Put the evil apps in a separate work profile (Shelter app). Look at the configurations of the apps and opt-out of tracking.

Can you give a possibility to open links (to external sites) in the default browser (of the Android system)?

If you need Google Maps from time to time use GMaps WV it is a a webview shell for google maps.
